5 Quick and Easy Gluten Free School Snacks

Hey Everyone!

As some people may know, our youngest daughter has been diagnosed with something called PANDAS syndrome. This means that in order to help her with some of the issues stemming from this syndrome, she has had to eliminate Gluten from her diet. It has taken a lot of trial and error to try and find some gluten free things she likes, but here are some of her favourites to pack in her lunch box for school!


1. Popcorn. We try to just make the air popped popcorn in the mornings, that way it is fresh for the day. But sometimes it is well worth the $3 for the Woolies homebrand popcorn that comes in packets. They also have the sweet and salty flavour that is always a hit in our house.

2. Mini pancake muffin bites. These are super easy to make and don't take long. Our daughter loves the Coles home brand I'm Free From Gluten range, so we just buy the pancake shaker bottle in that brand and pour them into a mini muffin pan. We add things like blueberries, chocolate chips etc to them as well. We make the whole batch on a Sunday afternoon and after they have cooled, we chuck them in a freezer bag and into the freezer they go! They are ready for the lunch box or breakfast in a flash!

3. Rice cakes. Typically she loves these with Nutella but anything can go on these really. They replace a sandwhich for her as it has been rather difficult finding a Gluten Free bread that she likes. Rice cakes are a lot cheaper than a loaf of gluten free bread as well so that is a bonus!

4. Carrot sticks and Hummus. Carrot sticks are great as a snack especially when you have sensory seekers who enjoy the crunch! Our daughter currently loves the crunchy snacks and it is a bonus when it is also healthy! Keep the chopped up carrot sticks in a jar with some water in the fridge and they last a lot longer. Hummus is also great and a healthier alternative to other flavours of dip.

5. Celery and Peanut butter. My kiddos go through stages of liking things like this so sometimes celery does end up not being eaten, but when they do like it, it is a great option for a snack. Just check with the school if they are Nut Free. Cream cheese is a good alternative to the peanut butter in those cases.

Day in the life

Hey Everyone! As a busy mum of 4, I am pretty much on the go all day. So I just thought, maybe, I would share what one day is like for me. Before I get out of bed in the morning, I like to read one chapter in Proverbs. Proverbs is such a good way of making sure I am reading God's Word daily because it has 31 chapters - a chapter for each day of the month. This way, while I am going through my morning routine, I have something godly running through my brain instead of the chaos of whatever I have on that day.  Next up is coffee... after making sure my teenage son is up and getting ready for the day. I am super lucky because my Mum also lives with us and she gets up a little bit before me and has my coffee ready and waiting for me! My Top 10 Cookbooks!

Hey Guys! You all know I am a mumma of a large family, so I kinda have to have a few favourite cookbooks, right? I do have quite a few cookbooks and websites that I pull from when I am meal planning, particularly when I get stuck with making the same meals over and over (it happens... I am far from perfect guys...).  Some of these are for thermomix recipes specifically, (my goal for the year is to use my thermomix more) while others are just general cookbooks. So lets get into it! 1. Thermomix Every Day Cookbook. This is the cookbook you get with your Thermomix and it has basic recipes and hints and tips to get used to your thermomix. My mum's favourite recipe in this is the custard.  2. Mamabake Cookbook. This is the cookbook I reach for when I have a lot of busy days where I will not have time to cook. There is a lot of slowcooker dump recipes in there that my family love and don't break the budget. 3. Once a Month Cooking by the Stay at Home...
